  • Flatten the chicken breasts with a mallet or rolling pin until they are about ¼ inch thick.
  • In a small bowl, mix together the dill, basil oregano, garlic powder, paprika, salt and pepper.
  • Brush the olive oil over both sides of each chicken breast.
  • Sprinkle the herb mixture over both sides of each chicken breast, covering liberally.
  • In a skillet over medium-high heat, heat olive oil, place the chicken breasts, and cook for about 4 minutes per side or until cooked through.
  • Drizzle lemon juice over each chicken breast before serving.

Notes

  • For a lighter flavor, you can also replace the olive oil with melted butter.
  • You can add other herbs or spices to the mixture to customize the flavor of your chicken.
  • To get crispy skin on your chicken, place it under the broiler for a few minutes at the end of cooking. Just be sure to keep an eye on it so it does not burn.
  • If you prefer a spicier version of this dish, you can add red pepper flakes to the herb mixture.
  • Make sure to let your chicken rest for 5 minutes before serving so that it stays juicy and tender.
