Heat the olive oil in a large saucepan or Dutch oven over medium heat. Add the diced onion and minced garlic, cook for 5 minutes until softened.
Add the diced green chilies, chicken broth, honey, bell pepper, jalapeno pepper, cubed chicken breasts, chili powder, sea salt, ground black pepper, diced tomatoes, cumin (optional), smoked paprika and oregano to the pot.
Bring the mixture to a boil then reduce heat and simmer for 10- 15 minutes until chicken is cooked through and vegetables are tender.
