Start by defrosting the frozen lobster if needed. Cut into small cubes, and set aside in a bowl.
Heat a large non-stick pan over medium-high heat, add 1 tablespoon of cooking oil, and wait until it gets hot.
Add shiitake mushrooms and garlic to the pan and stir-fry for 1 minute.
Add lobster cubes, honey, butter, and stir-fry sauce to the pan and continue to stir-fry for another 2 minutes.
Add cooked noodles, spinach, Parmesan cheese, and salt & pepper to taste. Stir-fry everything together until it is heated through, about 2 minutes.
Serve with extra Parmesan cheese.
