Ingredients

  • 1 lb chicken, cut into 1.5 inch pieces
  • 1 lb Italian sausage without casing
  • ¼ cup and 1 tbsp (Separated) all-purpose flour,
  • Salt to taste
  • Pepper to taste
  • 1 red bell pepper, seeded and cut into 1.5 inch pieces
  • 1 green bell pepper, seeded and cut into 1.5 inch pieces
  • 1 large onion, diced
  • Olive oil
  • 1 russet potato (3/4 inch dice)
  • 2 cups of chicken broth
  • 16 oz cremini mushrooms, quartered
  • 4 large cloves of garlic, minced
  • 1 cup of halved peppadew peppers
  • 1 cup white wine
  • ½ cup of brine from peppadew peppers
  • 2 tbsp of chopped parsley
  • 1 tbsp Italian seasoning
  • 2 tbsp butter

Step by step instructions

Step 1

Generously season chicken cubes with salt and pepper on both sides. In a shallow bowl, combine 1/4 cup flour and pepper to taste. Dredge the chicken in the mixture, shaking off any excess flour before transferring it to a plate.

Step 2

Heat olive oil in a large skillet over medium-high heat until it shimmers. Add the chicken to the hot oil and cook, stirring occasionally, for about 4 minutes or until golden brown. Remove from heat and transfer the chicken to a plate.

Step 3

Add the sausage to the same skillet and cook until lightly browned, breaking it up with a wooden spoon as it cooks. Transfer the cooked sausage to a plate and set it aside. 

Step 4

Pour off all but enough fat to coat the bottom of the pan before adding onions, red bell pepper, green bell pepper, mushrooms and garlic. Cook these ingredients for 6-7 minutes. 

Step 5

Add white wine to the skillet, bring to a boil then reduce heat and simmer vigorously until the liquid has reduced to a syrupy consistency – about 5 minutes.

Step 6

Sprinkle 1 tablespoon of flour into the skillet and cook for 2 minutes, stirring constantly. Slowly pour in the chicken broth while whisking. Continue whisking until the mixture is smooth.

Step 7

Add the cooked chicken, sausage, peppadew brine, chicken stock, russet potato, 2 teaspoons salt, 1/2 teaspoon pepper, Italian seasoning and peppadew peppers; to the skillet and stir together. Bring to a boil then reduce heat to medium-low and simmer for about 15 minutes or until potatoes are tender.

Step 8

Remove from heat and stir in the butter and parsley. Taste and adjust seasoning as needed.

Tips

– For a creamier sauce, add a splash of heavy cream before baking.

– You can substitute the Italian sausage for other proteins such as turkey sausage or ground beef.

– To make this dish gluten-free, use gluten-free flour instead of all-purpose flour.

Instructions

Take a shallow bowl, combine 1/4 cup all-purpose flour along with an appropriate quantity of pepper to taste for dredging the chicken in. Shake off any excess flour before transferring it to a plate.
  • In a large skillet over medium-high heat, warm up a generous amount of olive oil until it shimmers. Gently place the chicken in the hot oil and cook, stirring occasionally, for about 4 minutes or until crisp and golden-brown. Remove from heat and transfer the cooked chicken onto a plate.
  • To the same skillet, add sausages and fry until lightly browned; breaking them up with a wooden spoon as they cook. Transfer the cooked sausages to the plate and set it aside.
