  • 2 tsp freshly minced ginger
  • 1 Tbsp vegetable oil
  • 1 tsp Kadoya sesame oil
  • 1 medium-sized pineapple
  • 1 Tbsp pineapple juice
  • 1/3 cup La Choy Lite Soy Sauce
  • 3 Tbsp brown sugar
  • 3 cloves of garlic (minced)

For the Jerk Marinade

  • 2 tsp cornstarch
  • Thin green onions slices for garnish
  • 2 tsp water and
  • Sesame seeds for topping
  • 2 cups cooked rice (for serving)

Step by step instructions

Step 1

In a large bowl, combine the chicken, ginger, vegetable oil, sesame oil, pineapple juice and soy sauce. Mix to combine and set aside while you prepare the marinade.

Step 2

For the jerk marinade: In a small bowl combine the cornstarch with 2 teaspoon of water until it forms a paste. Add the brown sugar, garlic, and green onions to the marinade and stir until blended.

Step 3

Pour the jerk marinade over the chicken mixture and mix well to combine. Cover with plastic wrap and refrigerate for at least 30 minutes, or up to overnight.

Preheat oven to 375°F. Peel and core the pineapple, reserving any juice that is released during prep. Slice the pineapple into 8 wedges. Place the pineapple wedges in an oven safe dish and pour over any reserved juices from prepping the pineapple.

  • Pour the jerk marinade over the chicken mixture and mix with care until everything is perfectly integrated. Cover bowl with plastic wrap and let it sit in the refrigerator for a minimum of 30 minutes or up to overnight.
  • Preheat oven to 375°F. Peel and core the pineapple, collecting any juices that are released during the process. Cut up the pineapple into 8 wedges and place them in an oven safe dish with all of the collected juices.
  • Place chicken mixture onto a parchment paper-lined baking sheet, spreading it out evenly with a spatula or spoon. Bake inside preheated oven for 25-30 minutes, or until the chicken is fully cooked through and looks golden brown.
