Beaver nuggets are sweet, crunchy corn puffs coated in a buttery brown sugar and maple glaze. To make a copycat at home, melt butter, light brown sugar and light corn syrup, then stir in baking soda, vanilla and maple extract. Toss the glaze with Puffcorn, bake on a parchment-lined sheet at 350°F/176°C for 10 minutes, and cool completely so they crisp up.
This easy homemade version uses a short ingredient list and one saucepan. It gives you the sweet, buttery crunch of the Buc-ee’s snack without a road trip to Texas.

What Are Beaver Nuggets Made Of?
Beaver nuggets are puffed corn (often sold as Puffcorn) with a sweet, sticky coating. The snack is best known from the Buc-ee’s convenience store chain in Texas, where it is a popular grab-and-go treat.
In this copycat, the coating is butter, light brown sugar and light corn syrup, flavored with vanilla and maple. The corn syrup keeps the glaze smooth and helps it cling to every puff. The baking soda lightens the glaze and gives it a golden color.
You may also see this snack searched as “beaver nuts” or “Buc-ee’s nuggets.” It is the same sweet corn puff snack, and no nuts are involved.

How Close Is This to the Buc-ee’s Version?
This recipe copies the flavor profile: a buttery, caramel-like brown sugar coating with a hint of maple on light, airy corn puffs. Buc-ee’s does not publish its recipe, so I can’t promise an exact match.
The main difference you may notice is texture. Store batches are made in bulk with commercial equipment, while a home batch on a baking sheet can be a little more or less crisp depending on your oven and how evenly you coat the puffs.
If you want a puff that is less sweet or more buttery than the store version, adjust it after the first batch. Try the dusting and spice ideas below.
What Ingredients Do I Need for Homemade Beaver Nuggets?
You need seven ingredients, and exact amounts are in the recipe card below.
- Plain or butter-flavored Puffcorn: this is the main ingredient that gives your Beaver Nuggets the crunchy texture.
- Unsalted Butter: this will give your snack a delicious buttery flavor.
- Imperial Sugar Light Brown Sugar: this sugar provides the sweetness and caramelization for a classic Buc-ee flavor.
- Light Corn Syrup: this helps with binding and also adds to the sweetness.
- Baking Soda: this helps with the caramelization of your Beaver Nuggets and gives them a nice golden color.
- Vanilla Extract: this adds depth to the flavor profile as well as enhances other flavors in the recipe.
- Maple Extract/Flavoring: this provides a unique maple flavor that is classic to Buc-ee’s Beaver Nuggets.

Buc-ee’s Beaver Nuggets Recipe
Equipment
- knife
Ingredients
- 1/2 teaspoon of baking soda serving as a leavening agent that creates air pockets in the caramel, resulting in a light and crisp texture.
- 1/2 cup of packed Imperial Sugar Light Brown Sugar providing a deep and rich sweetness that caramelizes beautifully, adding a caramel undertone to the Puffcorn.
- 1/4 teaspoon of butter extract/flavoring adding a buttery and creamy essence that complements the Puffcorn and enhances the overall flavor profile. The butter extract creates a decadent and indulgent taste experience.
- 1/2 teaspoon of maple extract contributing a delightful and distinct maple flavor that brings a touch of warmth and richness to the Puffcorn.
- 1/4 cup of light corn syrup adding a touch of sweetness and viscosity to the caramel mixture, ensuring a sticky and glossy coating on the Puffcorn.
- 4-5 ounces of plain or butter-flavored Puffcorn recommended: Old Dutch, offering a light and airy texture that provides the perfect base for the sweet and buttery coating.
- 1/2 teaspoon of vanilla extract infusing a warm and aromatic flavor that enhances the overall sweetness and adds depth to the caramel coating.
- 1/2 cup of unsalted butter bringing a rich and creamy element to the recipe, ensuring a smooth and velvety consistency in the caramel coating.
Instructions
- Preheat the oven to an exact temperature of 350°F/176°C.
- Combine together butter, light brown sugar and light corn syrup in a medium sized saucepan. Stir continuously until the combination is melted evenly and bubbling lightly. Remove from heat source and stir in baking soda as well as both extracts until blended.
- Place Puffcorn into a large bowl and pour the butter and syrup mix over it. Mix carefully until each piece of Puffcorn is evenly coated with the liquid mixture.
- Place the Puffcorn onto a parchment paper-lined baking sheet in a uniform layer. Bake for 10 minutes or until a golden brown hue has been achieved.

Notes
- For extra sweetness, dust the Beaver Nuggets with powdered sugar after baking.
- You can also add other flavorings such as cinnamon or nutmeg for a unique twist on this classic snack.
- If you want to make these nuggets vegan, use vegan butter and substitute the light corn syrup with maple syrup or agave nectar.
- To make your nuggets extra crunchy, bake them at a higher temperature.
- Try adding some dried fruit or nuts to the mix for added texture and flavor.
- For a spicier version, add some cayenne pepper or chili powder to the butter mixture before baking.
Nutrition Information

As a dietitian, I treat these as a sweet snack. The coating is mostly sugar and butter, so a small handful is satisfying. Pairing it with plain yogurt or fruit helps balance it out.
How Do I Make Beaver Nuggets Extra Crunchy?
Cool them completely on the pan, in a single layer, before you taste or store them. Piling warm nuggets into a bowl traps steam and softens them.
Spread the puffs in one even layer on the baking sheet and watch for a deep golden color. If your oven runs cool, add a minute or two rather than raising the heat, since the sugar can scorch quickly.
Can I Add Nuts, Spices or Other Flavors?
Yes, and these small changes keep the base recipe working.
- Extra sweet: dust the cooled nuggets with powdered sugar.
- Warm spice: stir cinnamon or nutmeg into the glaze with the extracts.
- Spicy-sweet: add a pinch of cayenne or chili powder to the glaze.
- Extra texture: fold chopped nuts or dried fruit into the cooled nuggets so they don’t burn in the oven.
Is There a Vegan or Corn Syrup-Free Beaver Nuggets Alternative?
Yes. Use vegan butter, and swap the light corn syrup for maple syrup or agave nectar. The coating may bake up a bit stickier or softer than the original, since corn syrup is what keeps the glaze smooth.
If you can’t find Puffcorn, look for plain or butter-flavored corn puffs. Cheese puffs won’t work because they carry their own seasoning.
What Should I Serve with Beaver Nuggets?
Serve them as a snack or dessert topper. These pairings work well:
- Ice cream: scatter them over a scoop for crunch, or try them alongside this Quarterback Crunch Ice Cream Recipe.
- Yogurt and fruit: a handful on plain yogurt with strawberries or bananas adds crunch and balances the sugar.
- Salted popcorn or trail mix: the sweet and salty mix is easy to pack for road trips.
- Melted chocolate: dip the cooled nuggets, then let them set on parchment.
- Cheese sauce: for a sweet-and-savory snack board, offer a warm dip such as this Queso With Evaporated Milk Recipe.
How Do I Store Leftover Beaver Nuggets?
Store completely cooled nuggets in an airtight container at room temperature for up to a week. Any warmth left in them will create steam and make them chewy.
To refresh softened nuggets, spread them on a baking sheet and warm them at 350°F/176°C for about 5 minutes. Cool them again before eating so they crisp back up.

I have never been to a Buc-ees, however have heard friends rave about Buc-cees Nuggets and wanted to try them. I found this recipe and decided to try it. They were delicious although I had nothing to compare them to. I made some more for an event I had recently at which our friends attended who had had the originals. They told my family that after tasting mine (made with this recipe) they were going to be disappointed in the originals from Buc-cees! Definitely a hit and worth a try! Going into my repertoire of regular treats! I couldn’t find the Old Dutch puffcorn as recommended in this recipe, however, found Chester’s Puffcorn (butter) at Walmart.
Wow, that’s such high praise! 😊 It sounds like your version of the nuggets is a real crowd-pleaser, even rivaling the originals! I’m so glad the recipe worked out so well for you, and using Chester’s Puffcorn is a perfect alternative. Thank you for sharing your experience—it’s wonderful to hear this treat is now a part of your regular repertoire. Happy snacking! 🍿✨
