Where Did I First Try Okazuya long rice?

I first tried Okazuya long rice when I attended a Japanese cooking class in Tokyo. The instructor was teaching us how to make this famous Japanese dish and I instantly fell in love with it. The combination of flavors was simply amazing and the texture of the noodles was just perfect.

The instructor also shared some tips on how to make this dish taste even better.

He suggested adding a few drops of soy sauce or fish sauce when cooking the chicken to give the dish an added depth of flavor. He also suggested adding a bit of sugar to the broth for an even more delicious flavor.

Following his advice, I tried making this dish at home and it turned out great! Since then, Okazuya long rice has become one of my favorite dishes to make.

Ingredients

  • Chicken legs or thighs: It is the most important ingredient in this recipe. It provides flavor and texture to the dish.

Directions

Step 1

In a bowl, soak the vermicelli noodles in water for 15 minutes. Once done, set aside.

Step 2

Season chicken legs or thighs with salt and cook on both sides in a saucepan until slightly browned (60 seconds each side).

Step 3

Add sliced ginger to the pan and pour chicken broth over it. Simmer for 15 minutes.

Step 4

Remove the chicken legs or thighs from the pan once cooked and let cool before shredding them into ¼-inch pieces.

Step 5

Increase the heat of the broth to a boil, add drained vermicelli noodles, and cook for 1 minute. Put back in the shredded chicken thighs and chopped green onions, simmering for 3-5 minutes until done.

Cooking Tips

  • You can also add other vegetables like carrots or mushrooms to the Okazuya long rice.
  • If you want a more flavorful and spicy dish, add some chili oil or red pepper flakes to the mix.
