Step by step instructions

Step 1 :

Preheat the oven to 375°F and set aside a 9×3 baking dish. Spray it lightly with non stick cooking spray.

Step 2 :

For the filling, cook the ground beef in a large skillet until all of it is browned. Once finished, drain any excess fat and add the sliced onion and diced carrots to the skillet. Cook for an additional 2 minutes.

Step 3 :

Add frozen peas and corn, tomato soup, ketchup, water (optional), red wine vinegar, sugar, salt and pepper to the skillet. Stir until everything is combined. Lower the heat and simmer for about 10 minutes or until most of the liquid has evaporated from the mixture. Finally add in a few tablespoons of butter, stirring until melted.

Step 4 :

Pour the ground beef mixture into the 9×3 baking dish. Spread it evenly across the bottom of the dish.

Step 5 :

For the mashed potatoes, peel and cube the potatoes before placing them in a large pot filled with cold water. Bring to a boil and cook for 15 – 20 minutes, or until the potatoes are easily pierced with a fork.

Step 6 :

Drain the cooked potatoes and place them back in the pot. Begin to mash them using either a potato masher or electric hand mixer. Once mashed, add in the butter, milk, sour cream, Parmesan cheese, salt, pepper and garlic powder. Continue mashing until all of the ingredients are combined.

Step 7 :

Spread the mashed potatoes over top of the ground beef mixture in the baking dish. Use a spatula to smooth it out evenly across the top.

Step 8 :

Bake for 30 minutes or until lightly golden brown on top. Allow to cool before serving.
