In the Lotus Seafood Restaurant, I had the opportunity to try their signature dish and the crack sauce was just one of those flavors that stuck with me. It was flavorful, savory and had just the right amount of heat. Since then, I have been trying to recreate this flavor at home with my own twist on it.

Ingredients
Butter: Use 2 sticks of butter to get the best flavor.
Garlic: 3 tbsp of minced garlic will do the trick.
Old Bay Seasoning: 1 tbsp add old bay for some smokiness and depth of flavor to the dish.
Cajun Seasoning: A pinch of cajun seasoning kicks up the heat and adds a nice smokiness to the sauce.
Pepper: Freshly cracked black pepper will help balance out all of the flavors.
Onion: Used 1 chopping onion for flavor.
Heavy cream: 1 cup of heavy cream will help thicken the sauce and bring it all together.
Paprika: 1 tbsp of paprika adds a nice smoky flavor to the sauce.
Dried parsley: 1 tsp of dried parsley for color and flavor.
Lemon juice: A splash of freshly squeezed lemon juice brightens up the flavor.

Step 1
Begin by melting butter in a medium-large pot over low heat. Once melted, add onion and cook until it is soft and translucent (about 3 minutes).
Step 2
Add garlic and cook for 1 minute more. Increase heat to medium-high and stir in heavy cream, Cajun seasoning, old bay seasoning, paprika, garlic powder, dried parsley and pepper to taste. Whisk constantly until ingredients are well incorporated and the sauce starts to thicken.
Step 3
Finally, add a splash of lemon juice for acidity balance and remove from heat once desired thickness has been achieved.
Step 4
Transfer the sauce to a serving dish or storage container and serve over your favorite dishes.
