Marquesita Recipe 1 1

What Is Marquesita?

Marquesitas is a type of Mexican dessert that is made with a thin waffle-like batter filled with melted cheese. The waffle batter is traditionally made from eggs, sugar, milk, vegetable oil, and flour and then cooked in a marquesita iron until golden brown.

Once the marquesitas are done cooking, they are filled with Edam cheese and baked until the cheese is melted. They are then served hot with a drizzle of honey or syrup on top.

Where Did I First Try Marquesita?

I first tried marquesitas on a trip to Mexico City with my family. We had heard that the city was full of unique flavors and textures, so we decided to explore some of its traditional snacks.

We began our search for marquesitas by heading down the bustling streets of La Merced Market in the heart of the city. As we meandered through the narrow alleys, we spotted a small shop with an inviting aroma wafting from its entrance.

We walked in and were greeted by the sight of dozens of freshly made marquesitas sitting on trays, ready to be enjoyed. We each ordered one and settled in for our first taste.

As soon as I took my first bite, I was blown away by the creamy, salty cheese combined with the golden, crunchy waffle and a sweet drizzle of honey. The combination of flavors and textures was simply delicious.

We ended up spending hours in that shop trying different marquesitas and savoring each bite. It quickly became one of my favorite snacks to enjoy on trips back to Mexico City.

Ingredients

  • Eggs: A must-have item for this recipe is the eggs because it helps bind all the ingredients together, plus it gives it an amazing texture.
  • Sugar: To balance out the savory cheese, sugar is added to give a nice sweetness to each bite.
  • Milk: To make the waffle batter, you’ll need some milk for moisture and flavor. Any type of milk will work for this recipe – cow’s milk, almond milk, oat milk, etc.
  • Vegetable Oil: Vegetable oil helps the marquesitas become golden and crunchy when cooked. We recommend using a neutral-flavored oil such as canola or sunflower oil.
  • Vanilla Extract: Vanilla extract adds an extra layer of flavor to the waffle batter that really makes it stand out.
  • Flour: To make the waffle batter, you’ll need some plain all-purpose flour.
  • Salt: To balance out the sweetness of the sugar and vanilla extract, a bit of salt is added to the batter for flavor.
  • Edam Cheese: Edam cheese is traditionally used in marquesitas because it melts perfectly when baked, but you could also use other types of cheese such as cheddar or mozzarella.

Cooking Directions

Step 1

Preheat your marquesita iron or traditional waffle maker to the highest setting. Beat together the eggs and egg whites with a handheld mixer for about 5 minutes, or until they become foamy and white in color.

Step 2

Add the sugar, milk, vegetable oil, and vanilla extract to the egg mixture and beat on low speed until just incorporated. Sift the flour and salt together in a bowl, then add it to the egg mixture gradually while beating on low speed.

Step 3

Spray your marquesita iron or waffle maker with non-stick cooking spray, then pour about 1/4 cup of batter onto each cooking compartment. Close the lid and cook for about 5 minutes.

Step 4

Transfer the cooked marquesitas to a plate and let them cool. Once cooled, cut each one in half lengthwise so that you have four semicircles. Place the Edam cheese on top of each marquesita and close it with a toothpick.

Step 5

Place them in the oven preheated to 350 F and bake for about 5 minutes, or until the cheese melts. Serve your marquesitas hot with a side of honey or syrup if desired. Enjoy!

Cooking Tips

  • Make sure to preheat the marquesita iron or waffle maker before adding the batter for the best results.
  • Beat the eggs and egg whites until foamy and white in color for a light and fluffy texture.
  • When adding the flour to the batter, do it gradually while continuously beating at a low speed.
  • Spray your marquesita iron or waffle maker with non-stick cooking spray before adding the batter.
  • Make sure not to overfill each compartment as this will make them difficult to close and cook properly.

What Ingredients Can I Replace or Substitute While Making It?

  • If you don’t have any Edam cheese, you can substitute it with other types of cheese such as cheddar or mozzarella.
  • If you are vegan, you can replace the eggs with a flax egg (1 tablespoon of ground flaxseed mixed with 3 tablespoons of water) and the milk with plant-based milk such as almond, oat, or soy milk.
  • If you don’t have any vegetable oil, you can use neutral-flavored butter instead.
  • If you don’t like the taste of vanilla extract or prefer not to use it, you can leave it out of the recipe.
