For buttercream:
In a medium bowl, beat together the butter and confectionersβ sugar until creamy and light, about 1 minute of mixing time in total. Add a pinch of salt, vanilla extract, lemon juice (if desired), and hot water, and mix on low speed to combine. Increase the speed to medium-high and beat until light and fluffy; about 3 more minutes of mixing time total.
Spread frosting over the top of the cooled cake. Slice and serve.
